By now, you might be familiar with the name Felipe Trujillo. Last year we were able to buy a coffee from him that we felt perfectly served the purpose of Harp & Bowl, buying reeaally good coffee in order to share it with others and push good coffee forward. In April of 2024 we got the opportunity to meet Felipe and his wife María thus beginning our first direct trade relationship! Felipe and María have now helped us source multiple amazing coffees like our offerings from Diego Campos, and Norbey Quimbayo, and we’re excited to once again be offering coffee produced by Felipe himself at his farm La Ventolera. Felipe does many experiments with fermentation, pulling from his experience in the wine industry, this offering is a seemingly natural fusion of the two.

“Wine Washed” is a semi-washed process coffee (another name for a style of honey processing). After an initial aerobic fermentation of the cherries, the coffee seeds are depulped and added to another fermentation tank with Lalvin ICV-D47, a chardonnay yeast which is known for developing fresh and crisp fruity flavors in wine. These elements are fermented anaerobically for 3 days before being dried in covered sunbeds for 2 weeks.

We've loved this friendship that we've formed with Felipe and María and watching their venture La Ventola thrive. It’s proof that as we as consumers become willing to pay higher prices for better coffees, specialty coffee becomes more sustainable of an industry and benefits everyone and makes good coffee more accessible.

AGRICULTURE INFO

Produced by Felipe Trujillo at his farm La Ventolera in Antioquia, Colombia.

A honey processed coffee, including a 48 hour aerobic fermentation in cherry, followed by depulping and a 72 hour anaerobic fermentation with chardonnay yeast.

A blend of Castillo and Colombia varietals.

Grown at an altitude of 1900 - 1950 Meters (6230 - 6400 Feet).

Harvested in June 2024.

Roasting Schedule

We roast Monday, Wednesday & Friday and shipped within 2 days of receiving.

Orders may be fulfilled with coffee that we have on hand.

We recommend resting coffee for 7-14 days before brewing.
