Volume 6 • Colombia Rivier Quintero
Produced by Rivier Quintero at his farm, Buena Vista, in Inza, Cauca, Colombia.
Washed Processed • Cherries are harvested and oxidized for 24 hours before being pulped. The seeds are then aerobically fermented in water for another 24 hours before being washed, then dried for 21 days.
Colombia & Caturra Varietals • A blend of 2 common specialty coffee varieties

Produced by Felipe Carwachinchay at his farm, La Lima, in San Ignacio, Cajamarca, Peru.
Anaerobic Washed Process • The cherries were harvested and anaerobically fermented for only 12 hours before being pulped, washed of their mucilage, and dried on raised beds.
Geisha Varietal • The most sought-after variety of coffee in the world, popularized by Hacienda La Esmeralda in the 2004 Best of Panama Auction.

Flavor Profile • Lemonade, Black Tea, Sweet & Delicate
Produced by César LLanten at his farm, La Florida, in San Adolfo, Huila, Colombia.
Washed Process • The ripe cherries were harvested and left to oxidize for 12 hours before being pulped and moved to fermentation tanks to undergo 24 hours of aerobic fermentation in their mucilage. The mucilage was then washed off, and the coffee seeds were left to sun-dry on African mesh beds for 10–15 days.
Pink Bourbon Variety • A high quality, rare specialty variety discovered recently in Colombia. Identified by their salmon-pink cherry skins, the pink bourbon variety presents bright fruit flavors and complex floral nuances.

Grown by the farmers of the Karambi community and processed by the Kanzu Washing Station in Karambi, Nyamasheke, Rwanda.
Washed Processed • Cherries were harvested and pulped before a 16-18 hour wet-aerobic fermentation. The seeds were then washed, skin dried, and later sun dried on raised mesh beds.
Bourbon • A high quality specialty variety first widely cultivated in the 1700s known for its natural sweetness.
