Natural State is a coffee series designed to celebrate great Natural processing, where coffee seeds are dried entirely in the cherries that they were harvested in. These kinds of coffees usually boast juicy, fruity acidity and vibrant flavors.
WHAT IS NATURAL PROCESSING?
Processing refers to the method a coffee farmer takes to get the coffee from within the cherry to a dried seed that’s ready to be exported to us. Natural processing is the simplest, and oldest processing method. It’s also the longest of the traditional methods, sometimes taking up to 8 weeks! The natural process often results in juicier fruity flavor and acidity, heavier body and sometimes even funky characteristics.
Coffee cherries are picked and left to dry, usually on patios or raised mesh beds.
Drying usually takes 2-6 weeks, allowing for the fruit to have a greater impact on the flavor of the coffee seed over time.
Once fully dried, the cherries are depulped and milled, leaving only the green coffee behind.
The green coffee is then sent to us to roast!
