





Natural State
Natural State is our signature natural offering, meant to highlight affordable yet exceptional natural processed coffees. As coffee goes in out of seasons, we will constantly be searching for fresher crops, introducing new “volumes” every 4 - 6 months. Natural State Volume 4 comes from the Antioquia region in Colombia. It’s a regional blend processed by our direct trade partner Felipe Trujillo at his farm La Ventolera. For this offering, Felipe buys fresh cherries from farmers in Antioquia and preforms the natural process on them.
WHAT IS NATURAL PROCESSING?
Processing refers to the method a coffee farmer takes to get the coffee from within the cherry to a dried seed that’s ready to be exported to us. Natural processing is the simplest, and oldest processing method. It’s also the longest of the traditional methods, sometimes taking up to 8 weeks! The natural process often results in juicier fruity flavor and acidity, heavier body and sometimes even funky characteristics.
Coffee cherries are picked and left to dry, usually on patios or raised mesh beds.
Drying usually takes 2-6 weeks, allowing for the fruit to have a greater impact on the flavor of the coffee seed over time.
Once fully dried, the cherries are depulped and milled, leaving only the green coffee behind.
The green coffee is then sent to us to roast!
