Most of you are already familiar with Felipe, but in case you’re not let us remind you a little bit of his background. Felipe took a brave step leaving his job as a CEO here in Dallas TX to begin producing coffee years ago, while developing his skills Felipe applied his knowledge of fermentation from his time in the wine industry to coffee production resulting in incredibly complex and unique coffees; this Yellow Colombia varietal is a great example of his work.

This coffee was fermented for Anaerobically (meaning with little to no oxygen) for 7 days as opposed to a more typical 2-4 days that you’ll see from many producers. Every day that a coffee is fermented comes with an increased risk of over-fermentation where coffees can taste sour or like rotted fruit, but this coffee expresses incredibly boozy and complex, with a nearly malty/ milk-chocolatey sweetness, a testament to Felipe’s skill in coffee production and fermentation.

We bought this coffee directly from Felipe’s farm La Ventolera which means that every dime that we spent goes to him and his staff, we’re excited for you to enjoy the fruits of his labor and ours.

AGRICULTURE INFO

Produced by Felipe Trujillo at his farm La Ventolera in Antioquia, Colombia.

A natural process, beginning with a 12 hour aerobic fermentation, followed by a 7 day anaerobic fermentation.

Solely a Yellow Colombia varietal.

Grown at an altitude of 1820 Meters (5970 Feet).

Harvested in June/July 2024.

We roast Monday, Wednesday & Friday and shipped within 2 days of receiving.

Orders may be fulfilled with coffee that we have on hand.

We recommend resting coffee for 7-14 days before brewing.
