TRACEABILITY
This Heirloom variety, originally from Ethiopia, was produced by legendary coffee producer Wilder Lazo at El Rubí in San Adolfo, Colombia. In partnership with Desarrolladores de Café they germinated a sample of green coffee and successfully grew 1,200 Sidamo Heirloom trees! After much hard work, this year Wilder was able to reap the first real small harvest. We’re super excited to be among the first to be able to offer this coffee.
PROCESSING IN DEPTH
After harvest, the Sidamo Heirloom cherries are washed and float-sorted in water tanks to remove any defects. Wilder then immediately depulps the cherries and puts the seeds into fermentation tanks for 60 hours, with the addition of 10 Spanish thyme leaves per 200kg of coffee cherries. After the anaerobic fermentation is finished, the seeds are fully washed of their mucilage and dried for 14 days.
