Seasonal • Ayla
This nostalgic, fruit-bomb coffee was grown by smallholder farmers living around Bombe Village in Sidama. Around 600 farmers contributed to this lot by selling their ripe coffee cherries to the Ayla Washing Station, where the coffee was produced and processed.
After being delivered to the Ayla Station, the ripe coffee cherries were float-sorted to remove any defects and left floating to ferment aerobically for 12 hours. This aerobic fermentation tends to bring more flavor intensity out of coffees without creating the funk we typically taste with oxidized or anaerobic fermentations. Following the brief fermentation, the cherries were moved to raised mesh beds to sun-dry for 28 days.
