Grown by smallholder farmers around the town of Hambela in Guji, Ethiopia and processed by Mesfin Bekele at his brother, Mesfin Bekele’s self-named washing station.

  • 120-Hour Low Oxygen Natural • The fruity and vibrant Wush Wush cherries were sealed in polypropylene bags for a 120-hour low-oxygen fermentation that developed deeply complex and boozy flavors. After fermentation the cherries were moved to raised mesh beds, where they sun-dried for 10-12 days.

  • Wush Wush Variety • A native Ethiopian variety that was categorized by the JARC in 1981 as particularly disease-resistant and high-scoring. After decades of study, the JARC released the Wush Wush variety—named after the town of Wushwush, where it was originally collected—for commercial use. The Wush Wush variety is known for its vibrant, fruit-forward flavors, sometimes called “the new Geisha.”

  • Grown at an altitude of 2120 Meters (6955 Feet)

  • Harvested from October 2025-January 2026

Flavor Profile • Deep & Complex, Cooked Blueberries, Craft Chocolates, Boozy

Seasonal • Mesfin Bekele

This incredible Wush Wush offering was produced by Mesfin Bekele at his brother Biru Bekele’s self-named washing station. The lot consists of Wush Wush cherries from local smallholder farmers in the town of Hambela, in Guji, Ethiopia.

After being harvested, the fresh Wush Wush cherries were sealed in porous polypropylene bags, creating a low-oxygen environment for fermentation that developed deeply complex, boozy, and rich flavors from the already fruit-forward and vibrant Wush Wush variety. The cherries were left to ferment for 120 hours before being moved to raised mesh beds, where they sun-dried for 10-12 days.
